Marsh Mushrooms

I grew up in Sackville, New Brunswick, which is a small town nestled in the heart of the Canadian maritimes. It's surrounded by acres of farmland and forests, but closer into the middle of town you can also find about 55 acres of protected marshlands. There are all sorts of treasures hidden in the marshes - 200 kinds of plants, 180 species of birds, including ducks, swallows, chickadees and woodpeckers, and also tons and tons of mushrooms.

One of my fondest childhood memories was going out to pick marsh mushrooms with my dad. His favourite kind to forage were field mushrooms (or meadow mushrooms). They have slender stems and wide, flat caps like oversized sun hats. After we'd fill a pail of them we'd bring them home, and my dad would cook them in milk or heavy cream on a cast iron pan. This design tries to capture a little bit of the magic in those treasure hunts out on the marsh.
